Wine at Terroirs: The Wine List
The list begins with organic sparkling wines, champagnes and aperitifs (including a stunning dry Marsala) and artisan ciders. The next page, is a selection of twenty by the glass (175ml) and pot lyonnais (500ml). This is followed by a short list with detailed tasting notes for people who don’t have the time or inclination to explore the entirety of the main list. Called “Wines of the Moment” it is an ever-changing selection of twenty wines (ten whites, ten reds) which captures the spirit and diversity of each of the regions.
The remainder of the list is arranged geographically and with indication of climatic style (Atlantic; Mountain; Garrigue & Maquis) and there are rubrics explaining the styles of the wines and some of the grape varieties from the areas. The name of the estate is given first with a descriptive tasting note (plus any other relevant information) followed by the name of the wine underneath.
There is a separate section for sweet wines and digestifs.
A sliding scale of mark-ups (including flat cash margins for the more expensive wines) should encourage customers to drink up the list and allow them to feel that they can afford to experiment. About 25 wines are under £20 and 80 in total under £30.
